{On Frugality and Pulled Pork}

You could say that the past couple of years has really transformed the way we meal plan around here.
You see, not only are we now feeding an additional mouth, but our budget has changed quite a bit since I no longer work full-time. We've always kept a pretty modest budget, so we've simply tried to add a few helpful practices to make sure we get the most out of each dollar and aren't frivolous spending hard-earned cash we could be saving!

Three very helpful things I've implemented to help us create and stay within our monthly food budget, while still buying high-quality ingredients, have been to spend some time clipping coupons, consciously look for the best deals before going to the store and bringing cash only for groceries. These things alone, while new for us, have been a big help!

I hope to share more in the future about some other things we've done to cut back on expenses and our goal to live completely debt-free, but for now let me to touch briefly on these three ideas.

First of all, let me just say that I am no fanatic couponer (nor do I have any desire to be!) but I do spend five to ten minutes every Monday going through the mailers for good coupons on items I already need to purchase. I am very conscious to only save a coupon if it is something I am already going to purchase, otherwise I end up spending more than I need to anyway!

Secondly, I pay closer attention to store ads and deals. For instance, I have learned that Sprouts typically has some of the best deals on seasonal & organic produce and certain meats (this week I got fresh Ahi fillets for $5.99/lb.!) Just being more aware of sales and such has not only saved us money, but allowed me to buy more pricey items we wouldn't normally spend the money on.

And finally, a brand new practice we've implemented is paying cash for groceries. While not rocket science, it definitely makes me think twice before buying something we don't necessarily need and keeps the budget in check. Since I've got a competitive nature, this is kind of a fun thing for me to see how much I can come in "under budget".

So now you know a bit more about where my head is at lately, I want to share a great recipe I recently tried for Pulled Pork! I should probably tell you that this is not something I would normally cook, but while grocery shopping at Sprouts last week I noticed a really great sale on boneless pork loin, like a REALLY great deal! So I purchased one and started looking for a fresh, new recipe to add to our menu. I quickly came across a simple crock pot recipe on Chow.com that looked promising. Of course, my husband was thrilled as pulled pork BBQ sandwiches are right up his ally. So you see, it was a win/win!


This was such a delicious meal (& made for excellent leftovers!) And sandwiches are just one of many possibilities. I'm thinking tacos or a salad would be equally tasty, and not to mention a great option for company or a party!

 Easy Slow Cooker Pulled Pork

2 medium yellow onions, thinly sliced
4 medium garlic cloves, thinly sliced
1 cup chicken stock or low-sodium chicken broth
1 tablespoon packed dark brown sugar
1 tablespoon chili powder
1 tablespoon kosher salt, plus more as needed
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1 (4-1/2- to 5-pound) boneless or bone-in pork shoulder (also known as pork butt), twine or netting removed
2 cups barbecue sauce (optional)

  1. Place the onions and garlic in an even layer in the slow cooker and pour in the stock or broth. Combine the sugar, chili powder, measured salt, cumin, and cinnamon in a small bowl. Pat the pork dry with paper towels. Rub the spice mixture all over the pork and place the meat on top of the onions and garlic. Cover and cook until the pork is fork tender, about 6 to 8 hours on high or 8 to 10 hours on low.
  2. Turn off the slow cooker and remove the pork to a cutting board. Set a fine-mesh strainer over a medium heatproof bowl. Pour the onion mixture from the slow cooker through the strainer and return the solids to the slow cooker. Set the strained liquid aside.
  3. If the pork has a bone, remove and discard it. Using 2 forks, shred the meat into bite-sized pieces, discarding any large pieces of fat. Return the shredded meat to the slow cooker, add the barbecue sauce, if using, and mix to combine. If you’re not using barbecue sauce, use a spoon to skim and discard the fat from the surface of the strained cooking liquid, and then add 1/4 cup of the liquid at a time to the slow cooker until the pork is just moistened. Taste and season with salt as needed.

Slow Cooker Chicken Cassoulet

I am in a love affair...with my slow cooker! I don't think I ever understood how easy this little appliance could make my life until I received one at one of my bridal showers. Can you believe I wasn't even registered for one?!? Yep, Sharon Reed just knew it would come in handy for my many domestic ventures! It has welcomed me home after a long days work to many a soups, stews, and even tacos and I am so grateful for it:)

Tonight I made, for the third time, Clean Eating's Slow-Cooker Chicken Cassoulet. I will say, the actual dish looks nothing like the picture in the cookbook, but tastes quite lovely! This time I added an additional step of shredding the chicken just before I served it (made super simple with this!) and Chris and I agree it makes the dish ten times better. Mainly because it makes it more of a stew and you take advantage of every last drop since the chicken is combined with the veggies and beans!

I was thinking this morning that I wouldn't have any new recipes to post this week with it being Thanksgiving and my keeping our menu planner really simple. But as we were having dinner Chris asked if I had ever posted this recipe. He seemed to think it crazy not to share this one, so here you have it!


Slow Cooker Chicken Cassoulet
1 (15 oz) can navy beans, pinto beans or black-eyed peas, rinsed and well drained
4 boneless, skinless chicken breasts
sea salt and freshly ground pepper
2 Tbsp. olive oil
1 2/3 cups low-sodium chicken broth
1 medium onion, peeled and chopped
4 celery stalks, trimmed and chopped
4 garlic cloves passed trough a garlic press
1/4 cup sun dried tomatoes (not packed in oil)
3 large carrots, peeled and cut into chunks
1/4 cup fresh basil
1 T. thyme
2 Tbsp. fresh minced parsley

And just a side note, fresh herbs can be substituted for dried herbs, just make sure to use a bit less since they are more concentrated.

1. Spread half the beans in the bottom of the slow cooker.
2. Season chicken with pepper and sea salt. Heat oil over medium heat in a skillet. Brown the chicken on both sides (about 2-3 minutes each side). Place the browned chicken on top of the beans in the slow cooker. Top with remaining beans and chicken broth.
3. Saute the onion, celery, sun-dried tomatoes, carrots, garlic and herbs using the same skillet. Spread this mixture over the chicken. Cover and put on low heat for several hours.

Hansen Happenings

Happy Wednesday morning!

I am feeling exceptionally good today for a few reasons. The first being that it rained last night and I am loving the chilly, gloomy weather that comes along with rain (at least for now)! And secondly, today is my Thursday since I am taking Friday off for the Harvest Festival! I requested the day off ages ago to be sure I would get it! I'm just a little excited!!

Today seemed like a perfect day for a crock pot dinner so I prepared Slow Cooker Chili Chicken Tacos this morning. Yum! And I've got to say, this blog has become a handy little reference for me when it comes to recipes we've really enjoyed. In fact, this week alone I have made Almond Stuffed Chicken, Adobo Rubbed Pork Tenderloin and Peanut Butter and Jam Cookies!

It has occured to me that we are right in the middle of the cold and flu season and somehow, Chris and I have managed to stay under the radar and remain healthy...knock on wood. I'm really hoping it stays that way because we have much planned for the upcoming weeks!

And finally, I just can't believe how quickly the holidays are approaching! It seems a little bittersweet because on one hand, I adore this time of year, but on the other, I am all too aware of how quickly it passes. So I am making a solid effort to sit back and enjoy every single moment, Christmas movie, cup of hot chocolate, family gathering and holiday decoration. I can't wait to spend my second holiday season as a Hansen!

Fall Frenzy

Good morning and Happy September (the official month of the beginning of FALL!). I've got so much to talk about and very little time to talk about it...never a happy combination! I think after today things may slow down (fingers crossed!!).

Tonight I start training a friend of mine and I'm super excited about it! You should have seen me the past several days experimenting with new exercises and blasting loud music:) The distraction of personal training (including studying) is honestly getting me through these long days.

Funny story: because I knew I'd be really busy yesterday I planned a crock pot chicken and barley stew for dinner. Perfect way to save me time, right? Well I completely forgot about it until I walked in the house last night and inhaled the amazing aroma of my already finished dinner! It was such a giant relief! Silly that I forgot I put it together that morning. Guess that's what happens when you have a lot on your mind. It was a clean eating recipe and my husband couldn't stop going on about how tasty it was:) I'm so looking forward to the leftovers for lunch!!

Everyone wins when an easy dinner turns into an easy lunch, making me a very happy girl! Can I get an Amen?!

And did I already say we are 21 days from FALL?! I'm so giddy and already planning our wine tasting trip to Amador County and our annual trip to Apple Hill! And how could I forget our trip to see my adorable siblings in October?!
