Larabar Love

Let me start by saying I am a big fan of simplicity when it comes to what I put in my body. I like to know what is in my food, which is why I prefer to to make most of our meals at home. But lets be honest, on days I am working from 6am to 8:30pm, I need some easy snacks that I can throw in my bag and eat on the go (especially when I only have a minute between clients!).

I am generally a big fan of portable fruit like apples and bananas, but sometimes I need something more. Something that tastes like a treat, yet has a lot to offer nutritionally, which is why I am LOVING Larabars. They come in the most delicious flavors (lemon bar, chocolate coconut, apple pie and cinnamon roll) and yet, they're gluten free and only contain pure and simple ingredients.

Take the Peanut Butter Cookie for example, the only ingredients: prunes, peanuts, salt. And you would have no idea! It seriously tastes like a little baked treat!

Bottom line - you need to go get yourself some Larabars today! You'll thank me later!

Savoring the Last Days of Summer

As you all know, Fall is nearing and the months of sunshine and warmth are coming to an end. But this year, instead of skipping past the last glorious days of Summer, we decided to celebrate the wonderful 80 degree temps by going to the zoo. Always an enjoyable outing in my opinion! Of course, Pinkberry was thrown into the mix, making for a perfect day!

Otherwise, the weekend was a welcome opportunity to declutter and organize those small spaces that often get overlooked and neglected, aka: the "junk drawer", linen closet, laundry room and hall closet. Amazing what a little organization can do! But I'm not done yet...stay tuned for my next home makeover project!

Carrots, Eggs & Coffee

A friend emailed this to me today and I really wanted to pass it on. I know it's a bit long, but I think worth reading. Have a lovely weekend!

A young woman went to her mother and told her about her life and how things were so hard for her. She did not know how she was going to make it and wanted to give up, She was tired of fighting and struggling. It seemed as one problem was solved, a new one arose.

Her mother took her to the kitchen.. She filled three pots with water and placed each on a high fire. Soon the pots came to boil. In the first she placed carrots, in the second she placed eggs, and in the last she placed ground coffee beans. She let them sit and boil; without saying a word...

In about twenty minutes she turned off the burners.. She fished the carrots out and placed them in a bowl. She pulled the eggs out and placed them in a bowl. Then she ladled the coffee out and placed it in a bowl. Turning to her daughter, she asked, ' Tell me what you see. '

' Carrots, eggs, and coffee, ' she replied.

Her mother brought her closer and asked her to feel the carrots. She did and noted that they were soft. The mother then asked the daughter to take an egg and break it. After pulling off the shell, she observed the hardboiled egg.

Finally, the mother asked the daughter to sip the coffee The daughter smiled as she tasted its rich aroma. The daughter then asked, 'What does it mean, mother? '

Her mother explained that each of these objects had faced the same adversity: boiling water. Each reacted differently. The carrot went in strong, hard, and unrelenting. However, after being subjected to the boiling water, it softened and became weak. The egg had been fragile. Its thin outer shell had protected its liquid interior, but after sitting through the boiling water, its inside became hardened. The ground coffee beans were unique, however. After they were in the boiling water, they had changed the water.

' Which are you? ' she asked her daughter. ' When adversity knocks on your door, how do you respond? Are you a carrot, an egg or a coffee bean?

Think of this: Which am I? Am I the carrot that seems strong, but with pain and adversity do I wilt and become soft and lose my strength?

Am I the egg that starts with a malleable heart, but changes with the heat? Did I have a fluid spirit, but after a death, a breakup, a financial hardship or some other trial, have I become hardened and stiff? Does my shell look the same, but on the inside am I bitter and tough with a stiff spirit and hardened heart?

Or am I like the coffee bean? The bean actually changes the hot water, the very circumstance that brings the pain. When the water gets hot, it releases the fragrance and flavor. If you are like the bean, when things are at their worst, you get better and change the situation around you.

When the hour is the darkest and trials are their greatest do you elevate yourself to another level? How do you handle adversity? Are you a carrot, an egg or a coffee bean?

Dinner Last Night: Cold Sesame Noodles with Chicken and Cucumbers

Remember this meal I have been trying to make for weeks now? Well I finally cooked it last night and it was delicious! I even got two "Mmms" out of Chris as he took his first bite. In the Hansen household, that means success!

Before making this dish I read through the reviews and I'm glad I did. It seemed a pretty unanimous suggestion to use more sambal oelek than the recipe called for, which turned out great because we both like spicy. I also used soba noodles in place of udon noodles. My only complaint is that I didn't get to experience the apparently "amazing" leftovers. You can see why...

Deep Breath. Smile. Repeat.

This has been one heck of a week - difficult, stressful and nothing seems to be going right. Which of course makes me want to sit in my grumpy pants until it all goes away.

But then I stumbled across this:

And it's got me thinking about my attitude. Do you realize we can even be excellent complainers and pessimists? Yuck, I do not want to make a habit of negative actions! So rather than be a grumpmeister, I am choosing to be positive and consistent, even when things aren't going perfectly.

Currently Loving: Perfect Brownies


I am such a sucker. No really, every time The Perfect Brownie commercial comes on TV I tell myself I'm going to but one next time I'm at Bed Bath & Beyond (they have an entire "As Seen on TV" section!). And now it's been over a year since I first said that and my kitchen still lacks the Perfect Brownie pan.

It's not as if I am incapable of cutting brownies the old fashioned way, but I LOVE that every brownie comes out perfectly even and each has that coveted crispy edge! And unlike most gimmicks, I know this works because I bought one for my mom and mother-in-law for Christmas last year and they both love it!

I have endless ideas for the pan, such as: individual blondies, Rice Krispie treats, lemon bars, carrot cakes and so much more! Plus, you can decorate each one seperately. So fun!

Pearing It Down


I have been wondering what would finally bring on that deep yearning for Autumn I'm usually stricken with this time of year. Apparently, baked pears were just the ticket. It all started with these gingered pears* I made for dessert last weekend. Oh my, what is it about the warm, delectable aroma of pears and ginger that make you long for chillier weather and all things pumpkin?

This dessert is so simple and comforting I just had to share. I served them warm atop good ol' vanilla bean ice cream. Delicious and gone before you could say, "More, please"!

*I substituted the sugar for agave nectar and halved the recipe.
